Slow cooked, Asian-style Pulled Pork



Here's a gorgeous go-to recipe that takes 5 minutes to put on in the morning and requires very little attention at all. It's quick, easy and absolutely delicious. If you don't have a slow cooker you could do this in a heavy based pot on the stove on lowest heat, but you may need to turn it more often to stop the pork and juices from sticking to the bottom.


Slow cooked, Asian-style Pulled Pork


Ingredients: (serves 6-8)
1.5kg pork shoulder/neck
750ml apple cider
125ml Sweet Indonesian Soy Sauce
2tbsp sesame oil
3cm piece ginger (finely sliced)
3 cloves garlic (finely sliced)
1 star anise


Tsatsiki:
350ml full-fat Greek yogurt
1/2 cucumber (peeled, seeded and chopped)
1 clove garlic (finely chopped)
salt and pepper

Method:
Season the meat with salt and pepper.


Put everything into the slow cooker and put on high for 3 hours with the lid on, turning every hour.
Turn down to low and cook for a further 3-4 hours (until the meat falls apart when pressed with a fork.

Pour the juices into a large saucepan, remove the star anise, and simmer for approximately 20-25 minutes or until the sauce has thickened into a delicious syrup.


Shred the pork with 2 forks and pour the thickened sauce over the pork. toss to coat.
Serve in rolls with lettuce and mayo or in wraps with tsatziki and coriander/baby gem lettuce.

For the Tsatsiki:
Simply mix all the ingredients together and season with salt and pepper.
